Birthday blueberry-apple pie

We had fresh blueberries (picked by a loving grandmother (mother of my husband), in the magical Hiiumaa forests), as well as some apples, so I decided to bake a lovely blueberry-apple crumble pie for our dear baby's 3 month birthday.


The decorating was not my best, because I messed up the egg-white, but it tasted still great. :)


The pie was nicely tangy and rich in blueberries, yum!


Served best with vanilla ice cream.

Even the crust was quite good. I still haven't found my ideal sweet short-crust pastry for such pies. This one was ok.. Maybe not ideal, but quite good.

Recipe:

Crust
250 g flour
100 g sugar
pinch of salt
1/2 lemon zest
2 tablespoons cold water
150 g butter (cold)
1 egg yolk

Filling
800 ml fresh blueberries
3 small apples, cut in small cubes
1/2 lemon zest
1/2 lemon juice
1 cup of sugar
1 teaspoon vanilla sugar
1/2 teaspoon cinnamon
2 tablespoons potato starch

Crumble
40 g sugar
40 g full grain oat flakes
40 g flour
50 g butter (cold)

Mix in a bowl flour, sugar, salt, lemon zest. Add grated cold butter (I grate the butter, can also cut in small pieces). Mix it with fingers until small, even crumbs are created (like bread crumbs). Then add egg yolk and water. Mix until smooth and even, but not too much. Make a ball out of it and place in a fridge for 30 min or more.
Mix together sugar, oat and flour, add grated (or cut in cubes) butter, make small crumble peaces with your fingers, place in the fridge until using.
Mix together everything for the filling.
Roll out the crust, place in a round tart dish, put the filling inside and cover with the crumble. Bake in 190 C for about 40 minutes, until golden. Serve warm or cold.

The egg white that stayed over can be beaten together with 50-100 g of powdered sugar and a bit of lemon juice, and used for decorating. It actually fit very well with the pie!

And the filling can be mixed up to your liking - if have more apples at home, can use apples instead, etc.
